3-4 medium potatoes 15-30 mL vegetable oil 5 mL paprika 2 mL dry mustard
2 mL garlic salt 125 mL light sour cream 60 mL shredded cheddar cheese
Directions
Move top oven rack to be approximately 10 cm from the top element. Turn oven to broil.
Wash and scrub potatoes; cut each potato into eight wedges. Dry off wedges (quite thoroughly) by patting with a paper towel.
Place potatoes in a bowl and toss lightly with the oil.
Place wedges, skin side down on a baking sheet.
Mix together paprika, dry mustard and garlic salt. Sprinkle the mixture over the potatoes. This works best if you pinch some of the mixture between your fingers and sprinkle it over each wedge.
Broil potatoes with tops about 10 cm from element for 12-15 minutes until golden brown and tender.
To serve, spoon sour cream onto center of serving plate and sprinkle with cheddar cheese. Arrange potato wedges around sour cream. Serve immediately.
