2 cups sifted all-purpose flour 2 tbsp white sugar 4 tsp baking powder 2 tsp salt
1/4 cup shortening 3/4 cup milk 1/3 cup brown sugar 1/2 tbsp cinnamon
Directions
Heat oven to 450°F.
Sift flour before measuring, then spoon it lightly into a dry measuring cup. Combine with white sugar, baking powder and salt in a mixing bowl.
Add shortening and cut in finely with a pastry blender until the mixture looks like coarse crumbs. Clean off pastry blender.
Pour in milk and stir with a fork until dry ingredients are dampened, and dough sticks together to form a ball. Add 1 - 2 tbsp more milk if necessary, but don't make it sticky.
Lightly flour a wooden cutting board and place ball of dough on it.
Knead gently 5-10 times until dough is smooth. Flatten dough gently.
Roll dough out to about 1/2 cm thick. Shape into rectangle.
Spread dough lightly with soft margarine or butter.
Sprinkle brown sugar lightly over dough and spread around to cover entire surface.
Sprinkle the cinnamon lightly over the brown sugar.
Start at the LONG side of the dough and roll towards the other side in "jelly roll" fashion. Seal seam and tuck in ends.
Use sharp knife and slice roll into 1 cm pieces.
Place pinwheels on greased cookie sheet. Bake 10-12 minutes or until lightly browned. Serve warm.
